Ultimate Cheesy Baked Broccoli Gnocchi

  • 1 lb Gnocchi
  • 3 cups Broccoli Florets
  • 1 cup Chicken or Vegetable Broth
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/41/2 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste
  • 4 oz Cream Cheese, cubed
  • 2 cups Shredded Mozzarella Cheese, divided

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the broccoli and gnocchi in salted water for 3 minutes, then drain.
  3. In a skillet, heat the broth and stir in the cream cheese until melted. Then, add mozzarella, garlic powder, onion powder, red pepper flakes, and season with salt and pepper.
  4. Fold in the gnocchi and broccoli until coated with the cheese sauce.
  5. Transfer to a baking dish, sprinkle with remaining mozzarella, and bake for 15 minutes until bubbly and golden.

Notes

For a crunchy topping, broil for the last minute. Ensure the cream cheese is softened to avoid a chunky sauce.
