Ultimate Cheesy Cabbage Beef Casserole

A heartwarming cheesy casserole filled with layers of cabbage, ground beef, and melted cheddar cheese, perfect for cozy nights.

  • 1 medium head of cabbage, chopped
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add ground beef, chopped onion, and minced garlic. Cook for 6-8 minutes until beef is browned, and onions are soft. Drain excess fat.
  3. Add chopped cabbage and sauté for about 5 minutes until it begins to wilt.
  4. Stir in diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Simmer for an additional 5 minutes.
  5. Transfer the mixture to the baking dish, pour beef broth over the top, and sprinkle shredded cheddar cheese on top.
  6. Cover with aluminum foil and bake for 30 minutes, then uncover and bake for another 10-15 minutes until cheese is golden and bubbly.
  7. Let it rest for about 5 minutes before serving.

Notes

This casserole can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months. Customize it by adding leftover vegetables or replacing ground beef with lentils for a vegetarian version.
