1 lb boneless, skinless chicken breasts, cut into cubes
12 oz rotini pasta
1 tbsp olive oil
1 tbsp Cajun seasoning
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Salt & pepper, to taste
Fresh parsley, for garnish
Instructions
Cook the rotini pasta according to package instructions until al dente, drain and set aside.
In a large skillet, heat olive oil over medium-high heat, add chicken and Cajun seasoning, cooking until golden brown and fully cooked, then set aside.
In the same skillet, sauté minced garlic until fragrant, about 1 minute.
Deglaze the pan with chicken broth, scraping up browned bits.
Stir in heavy cream and simmer until slightly thickened, about 2-3 minutes.
Add mozzarella and Parmesan, stirring until melted and creamy.
Return chicken and pasta to the skillet, tossing until well coated.
Season with salt and pepper, cook for an additional 2-3 minutes.
Garnish with parsley before serving.
