Cheesy Cajun Garlic Chicken Rotini Skillet

A comforting one-pan dish featuring tender chicken, creamy garlic sauce, and zesty Cajun spices, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 12 oz rotini pasta
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the rotini pasta according to package instructions until al dente, drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat, add chicken and Cajun seasoning, cooking until golden brown and fully cooked, then set aside.
  3. In the same skillet, sauté minced garlic until fragrant, about 1 minute.
  4. Deglaze the pan with chicken broth, scraping up browned bits.
  5. Stir in heavy cream and simmer until slightly thickened, about 2-3 minutes.
  6. Add mozzarella and Parmesan, stirring until melted and creamy.
  7. Return chicken and pasta to the skillet, tossing until well coated.
  8. Season with salt and pepper, cook for an additional 2-3 minutes.
  9. Garnish with parsley before serving.
