Irresistible Chicken Zucchini Bake

A comforting Chicken Zucchini Bake that combines juicy chicken breasts, fresh zucchini, and gooey mozzarella cheese for a delightful family dinner.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced into ½ inch rounds
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven to 400°F (200°C).
  2. Prepare Your Baking Dish by greasing it with nonstick spray or a drizzle of olive oil.
  3. Season the Chicken by patting it dry and seasoning with salt, pepper, and half of the Italian seasoning.
  4. Arrange the seasoned chicken breasts in the baking dish and surround them with zucchini slices.
  5. Add the Goodness by drizzling olive oil over the chicken and zucchini, then sprinkle garlic powder and remaining Italian seasoning.
  6. Cheesy Finish by piling on the shredded mozzarella cheese to cover the dish.
  7. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is golden brown.
  8. Rest for 5-10 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Great for meal prep and can be made ahead of time.
