  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese

  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Topping:
  • 2 cups crushed cornflakes or Ritz crackers
  • 2 tbsp unsalted butter, melted
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix filling: In a large bowl, combine hash browns, cheeses, soup, sour cream, 1/2 cup melted butter, onion, and seasonings.
  3. Transfer to dish: Spread mixture evenly in prepared baking dish.
  4. Add topping: Mix crushed cornflakes with 2 tbsp melted butter and paprika. Sprinkle over casserole.
  5. Bake 45-55 minutes until bubbly and golden brown on top.
  6. Rest 10 minutes before serving for easier slicing.
