Chewy Christmas Cranberry Orange Cookies

  • 1 cup brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt, then gradually add to the butter mixture until just combined.
  5. Fold in the dried cranberries, orange zest, and walnuts (if using).
  6. Scoop spoonfuls of dough onto the baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until the edges are golden and centers are set but soft.
  8. Allow cooling on sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for longer storage. You can adjust the ingredients for nut-free versions or to include different mix-ins.
