  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Melt the butter in a saucepan over medium heat until golden brown and nutty, about 5-7 minutes, then let cool slightly.
  3. Combine the browned butter, brown sugar, and molasses in a large mixing bowl; stir until smooth.
  4. Add the egg and vanilla extract, mixing until fully incorporated.
  5. Whisk together flour, baking powder, and salt in a separate bowl, then gradually incorporate into the wet mixture.
  6. Gently fold in the shredded coconut.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 20-25 minutes or until golden and a toothpick inserted comes out clean.
  9. Allow to cool for 10 minutes, then lift out and cool completely before slicing.

Notes

Store in an airtight container for up to 1 week or refrigerate for up to 10 days. For a nutty twist, add chopped walnuts or pecans.
