Chewy Gingerbread Bars

Deliciously soft and chewy gingerbread bars packed with warm spices, perfect for the holiday season.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with non-stick spray or line with parchment paper for easy removal.
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
  3. Cream together the softened butter and brown sugar until light and fluffy.
  4. Add the molasses, egg, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing carefully until just combined.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean but moist.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before cutting into bars.

Notes

Fresh spices enhance the flavor. Store in an airtight container for up to 5 days.
