  • 2 cups cooked chicken, shredded
  • 1 package (16 oz) gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering but not smoking.
  2. Sauté the diced onion and minced garlic until soft and fragrant, about 3 to 5 minutes.
  3. Add the shredded chicken and let it cook for about 5 minutes to integrate the flavors.
  4. Pour in the chicken broth and bring it to a gentle boil.
  5. Cook the gnocchi according to package instructions (usually around 2-3 minutes) in the boiling broth.
  6. Stir in the heavy cream and chopped spinach, cooking until the spinach wilts, about 3 to 5 minutes.
  7. Mix in the grated Parmesan cheese, followed by salt and pepper to taste.
  8. Serve hot, garnished with an extra sprinkle of Parmesan and fresh herbs if desired.

Notes

For a gluten-free option, consider using gluten-free gnocchi. Store leftovers in an airtight container in the fridge for 3-4 days.
