Savory Chicken & Wild Rice Soup

A comforting bowl of Chicken and Wild Rice Soup, perfect for chilly evenings, combining tender chicken, earthy wild rice, and fresh vegetables in a creamy broth.

  • 1 cup wild rice
  • 1 lb chicken breast, cubed
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 cups cream or milk

Instructions

  1. In a large pot over medium heat, melt a tablespoon of butter. Add the chopped onion, minced garlic, diced carrots, and celery. Sauté for about 5-7 minutes, or until they are tender and fragrant.
  2. Add the cubed chicken breast to the pot. Cook for another 5-7 minutes, stirring occasionally, until the chicken is browned on all sides.
  3. Stir in the wild rice, followed by the chicken broth, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes or until the wild rice is tender and the soup is fragrant.
  5. Stir in the cream or milk just before serving, letting it warm through for a couple of minutes.

Notes

This soup can be made ahead up to step 4. Store it for 3-4 days in the fridge and add cream or milk before serving.
