Sizzling Chicken Bacon Gnocchi

  • 2 tablespoons olive oil
  • 4 strips of bacon, chopped
  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for topping

Instructions

  1. In a large pan, heat 2 tablespoons of olive oil over medium heat until shimmering (about 1-2 minutes).
  2. Add the chopped bacon to the pan and cook until crispy, approximately 5-7 minutes, stirring occasionally. Remove and set aside on a paper towel.
  3. Add the chicken pieces in a single layer and cook for about 5-6 minutes, until browned and fully cooked.
  4. Stir in 4 minced garlic cloves and sauté for an additional minute until fragrant.
  5. Pour in 1 cup of heavy cream and 1 cup of chicken broth, stirring continuously until it comes to a gentle simmer (approximately 2-3 minutes).
  6. Toss in the gnocchi and spinach, gently stirring to combine, until gnocchi float and spinach wilts (about 2-3 minutes).
  7. Taste and season with salt and pepper as needed.
  8. Serve hot, topping each serving with crispy bacon and freshly grated Parmesan cheese.

Notes

Keep an eye on the pan’s heat to avoid burning the garlic. You can prep all your ingredients in advance for convenience.
