Irresistible Chicken Marsala Pasta

A comforting and delicious fusion of classic Chicken Marsala and hearty pasta, enveloped in a creamy wine-infused sauce.

  • 2 tablespoons olive oil (extra virgin for best flavor)
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 8 oz mushrooms, sliced (button or cremini work well)
  • 2 cloves garlic, minced
  • ½ cup chicken broth (low-sodium for better control of salt content)
  • ½ cup Marsala wine
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese (freshly grated is best)
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil Water: Fill a large pot with salted water and bring it to a rolling boil.
  2. Add Pasta: Toss in your chosen pasta and cook according to the package instructions until al dente (about 8-11 minutes).
  3. Drain: Reserve about a cup of pasta water, then drain the pasta and set it aside.
  4. Heat Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  5. Season Chicken: Season chicken pieces with salt and pepper.
  6. Sauté Chicken: Add the chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through. Remove from the skillet and set aside.
  7. Cook Mushrooms: In the same skillet, add mushrooms and cook for 4-5 minutes until browned. Add minced garlic and sauté for another minute.
  8. Add Liquid: Pour in the chicken broth and Marsala wine, scraping up any brown bits from the skillet. Bring to a gentle simmer.
  9. Incorporate Cream: Stir in the heavy cream and dried thyme, simmer for about 5 minutes until the sauce thickens slightly.
  10. Finish Sauce: Add Parmesan cheese into the sauce, stirring until melted and combined.
  11. Add Chicken: Return the cooked chicken to the skillet and mix everything until evenly coated.
  12. Toss with Pasta: Toss in the cooked pasta, adding reserved pasta water if needed to reach desired consistency.
  13. Serve: Garnish with fresh parsley before serving.
