Savory Chicken Mushroom Skillet

A comforting one-pan dish featuring succulent chicken breasts and earthy mushrooms, all cooked in a rich broth enhanced with fragrant garlic.

  • 4 Chicken Breasts (about 1.5 lbs), boneless and skinless
  • 8 oz Mushrooms, sliced (Cremini or button)
  • 1 Onion, chopped (yellow onion)
  • 3 Cloves Garlic, minced
  • 1 Cup Chicken Broth
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to taste
  • Fresh Parsley for Garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Season the chicken breasts with salt and pepper, then cook in the skillet for about 6-7 minutes per side until golden brown and cooked through (internal temperature 165°F); remove and set aside.
  3. Add chopped onions and minced garlic to the skillet and sauté for about 3-4 minutes until onions are translucent.
  4. Stir in the sliced mushrooms and cook for 4-5 minutes until they are soft and lightly browned.
  5. Add the chicken broth and bring to a gentle simmer for 2-3 minutes.
  6. Return the chicken to the skillet, cover, and cook for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

Ensure that chicken is at room temperature before cooking for even cooking. Leftovers can be stored in an airtight container for 3-4 days.
