Chicken Quesadilla Taco Bell Style

A copycat version of Taco Bell’s famous Chicken Quesadilla featuring juicy seasoned chicken, melted three-cheese blend, and creamy jalapeño sauce in a crispy grilled tortilla.

  • 2 large flour tortillas (10-inch)
  • 1 cup cooked chicken breast, shredded or diced
  • 1/2 tbsp taco seasoning
  • 1 cup three-cheese blend (cheddar, Monterey Jack, mozzarella)
  • 2 tbsp butter, softened
  • For the Creamy Jalapeño Sauce:
  • 1/4 cup mayonnaise
  • 1 tbsp sour cream
  • 1 tsp pickled jalapeño juice
  • 1 tsp minced pickled jalapeños
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/8 tsp garlic powder

Instructions

  1. Prep Chicken: Toss cooked chicken with taco seasoning until evenly coated.
  2. Make Sauce: Whisk together all sauce ingredients in a small bowl.
  3. Assemble: Spread 1 tbsp sauce on one half of each tortilla. Layer with cheese, chicken, then more cheese.
  4. Fold: Fold tortillas in half to create half-moons.
  5. Cook: Heat a skillet over medium. Butter outside of each quesadilla. Cook 2-3 minutes per side until golden and cheese melts.
  6. Slice: Cut into wedges and serve with remaining sauce for dipping.

Notes

  • For authentic flavor, use Taco Bell’s brand taco seasoning.
  • Add diced tomatoes or onions for extra crunch.
  • Use a panini press for extra crispiness.
