Chicken Teriyaki Noodles

A delicious childhood classic featuring tender chicken, savory teriyaki sauce, and soft udon noodles for a comforting family meal.

  • 12 oz udon noodles
  • 2 cups broccoli florets
  • 1 medium onion, thinly sliced
  • 2 medium carrots, julienned
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, finely sliced or grated
  • ½ cup soy sauce (use low-sodium if preferred)
  • ¼ cup brown sugar (light brown works best for warmth)
  • 1 tablespoon honey (optional, for added sweetness)
  • 2 tablespoons vegetable oil (for stir-frying)

Instructions

  1. Prepare the Chicken and Marinade: In a medium bowl, combine soy sauce, brown sugar, and honey until the sugar dissolves. Add chicken and let it marinate for at least 10 minutes.
  2. Cook the Chicken: Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the marinated chicken (discard the leftover marinade) and cook for 5-7 minutes, until golden brown and fully cooked, reaching an internal temperature of 165°F. Remove from the skillet and set aside.
  3. Cook the Udon Noodles: In a large pot, boil water and add udon noodles. Cook according to package instructions (usually around 8-10 minutes). Drain and rinse under cold water to stop cooking and prevent sticking.
  4. Stir-Fry the Vegetables: In the same skillet, add the remaining oil and heat over medium-high. Stir-fry garlic and ginger for about 30 seconds, taking care not to burn them. Add onions, carrots, and broccoli, cooking for 5-7 minutes until tender yet crunchy.
  5. Combine Chicken, Noodles, and Sauce: Return the cooked chicken to the skillet with a splash of the reserved marinade (if any). Stir to combine, then add cooked udon noodles and toss everything together. Cook for an additional 2-3 minutes until everything is well-coated and heated through.
  6. Serve: Serve immediately, garnished with sesame seeds or green onions if desired.

Notes

For quicker preparation, consider using pre-cooked chicken. Udon noodles can be substituted with rice noodles for a gluten-free option.
