Ultimate Chickpea Curry

A comforting and flavorful Chickpea Curry made with creamy coconut milk, hearty chickpeas, and vibrant kale.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until translucent.
  2. Add minced garlic and curry powder; cook for another minute until fragrant.
  3. Stir in chickpeas and chopped kale, cooking for about 3-4 minutes until the kale is wilted.
  4. Pour in coconut milk and bring to a gentle simmer for about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot over cooked rice.

Notes

Avoid burning the garlic by adding it after the onions are translucent; garnishing with fresh cilantro or a squeeze of lime enhances flavor.
