Creamy Chickpea Curry

A flavorful and creamy chickpea curry that combines spices and coconut milk for a comforting meal, perfect for family dinners.

  • 1 can chickpeas, drained and rinsed
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch ginger, grated or minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice or naan for serving

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat.
  2. Add the diced onion and cook for about 5-7 minutes until translucent and slightly golden.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  4. Add 2 tablespoons of curry powder and mix well, cooking for an additional 30 seconds.
  5. Pour in the can of coconut milk and stir until combined.
  6. Add the drained chickpeas and chopped kale, bring the mixture to a gentle simmer.
  7. Let it cook for about 10-15 minutes, until the kale wilts and flavors meld.
  8. Season with salt and pepper to taste and serve hot over rice or with naan.

Notes

For additional flavor, add fresh cilantro and a squeeze of lime before serving.
