Wholesome Chickpea Salad Sandwich

A delicious and easy chickpea salad sandwich that combines creamy vegan mayo, crunchy veggies, and zesty spices for a satisfying meal.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 2 tablespoons of vegan mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of lemon juice
  • 1/4 cup of diced celery
  • 1/4 cup of diced onion
  • Salt and pepper to taste
  • Whole grain bread or wraps
  • Lettuce and tomato for serving

Instructions

  1. Mash the chickpeas in a mixing bowl until mostly smooth, with some chunks remaining.
  2. Add vegan mayonnaise, Dijon mustard, lemon juice, diced celery, and diced onion to the bowl.
  3. Season with salt and pepper, then mix until well combined.
  4. Spoon onto whole grain bread or wraps, and add lettuce and tomato.
