Chickpea Vegan Meatloaf

A delicious, hearty, and customizable vegan twist on traditional meatloaf made with chickpeas and a variety of vegetables and seasonings.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup carrots, grated
  • 1/2 cup celery, chopped
  • 1/4 cup ketchup
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the chickpeas in a large bowl until chunky.
  3. Stir in remaining ingredients until well incorporated.
  4. Transfer mixture to a greased 8×4-inch loaf pan and press down firmly.
  5. Bake for 30-35 minutes until edges are firm and golden brown.
  6. Cool for a few minutes before slicing.

Notes

Make sure all ingredients are at room temperature before starting for better mixing. Adjust seasoning according to taste.
