Decadent Chocolate Banana Muffins

Delicious muffins that combine ripe bananas and rich chocolate for a comforting treat.

  • 2 ripe bananas, mashed
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, mix the mashed bananas, sugar, and melted butter until smooth.
  3. Stir in the eggs and vanilla extract until well combined.
  4. In another bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the chocolate chips.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Store the muffins in an airtight container for freshness. If they dry out, microwave for a few seconds to regain texture.
