Chocolate Cookie Dough Cheesecake Bars

  • ½ cup granulated sugar
  • 2 large eggs

  • ½ teaspoon salt
  • 16 oz cream cheese, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¾ cup mini chocolate chips
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a 9×9-inch square baking pan with parchment paper.
  2. Make the Chocolate Cookie Base: In a large bowl, whisk together the melted butter, light brown sugar, and granulated sugar. Add the eggs and vanilla; mix until smooth. Sift in the cocoa powder, flour, and salt; stir until fully combined. Spread the batter in the prepared pan and bake for 12 minutes. Allow to cool slightly.
  3. Prepare the Cheesecake Layer: In a separate bowl, beat softened cream cheese until smooth. Add in the brown sugar, granulated sugar, egg, vanilla, and salt; mix until fluffy. Gently fold in mini chocolate chips.
  4. Layer & Bake: Pour the cheesecake mixture over the cooled cookie base, smoothing the top. Bake for 30-35 minutes, until set with a slight jiggle. Cool to room temperature, then refrigerate for at least 3 hours.
  5. Make the Ganache: Heat heavy cream in a small saucepan until hot. Pour it over semi-sweet chocolate chips and stir until smooth. Spread ganache over chilly cheesecake layer and chill for another 30 minutes.
  6. Serve: Cut into squares, serve chilled, and enjoy!

Notes

Ensure ingredients are at room temperature for easy mixing. These bars can be stored in an airtight container in the refrigerator for up to five days.
