Irresistibly Festive Christmas Banana Bread

  • 1/3 cup melted unsalted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar (or brown sugar)
  • 1 large egg, beaten
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Stir in the melted butter until well combined.
  4. Add baking soda and salt, mixing well.
  5. Incorporate sugar, beaten egg, and vanilla extract until blended.
  6. Fold in flour, ground cinnamon, and nutmeg gently.
  7. If using, fold in chopped nuts.
  8. Pour batter into prepared loaf pan and bake for 60-65 minutes or until golden brown.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
