Delightful Christmas Breakfast Casserole

A comforting and festive breakfast casserole filled with layers of eggs, sausage or ham, cheese, and hearty bread or hash browns, perfect for Christmas morning.

  • 6 eggs (preferably organic)
  • 2 cups milk (whole or almond)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 pound sausage or ham (cooked and crumbled)
  • 4 cups cubed bread or hash browns
  • 1 cup diced vegetables (optional; bell peppers, onions, or spinach)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined and slightly frothy.
  3. In a greased 9×13 inch baking dish, layer the bread or hash browns first, followed by the cooked sausage or ham, then the shredded cheese and vegetables (if using).
  4. Pour the egg mixture evenly over the layers in the dish.
  5. Cover and refrigerate overnight if preparing ahead of time.
  6. When ready, bake uncovered for 40-50 minutes, or until the eggs are set and the top is golden brown.
  7. Allow to cool slightly before serving.

Notes

Be sure to bring the eggs and milk to room temperature for the best consistency. Consider watching closely towards the end of baking to avoid a dried-out casserole.
