Ultimate Christmas Jello Poke Cake

A visually stunning and festive poke cake infused with layers of strawberry and lime Jello, topped with Cool Whip, perfect for holiday celebrations.

  • 1 box white cake mix (plus eggs, water, and oil as directed on the box)
  • 3 large eggs
  • 1 cup water
  • ⅓ cup vegetable oil or melted butter
  • ½ (3-ounce) box strawberry Jello gelatin
  • ½ (3-ounce) box lime Jello gelatin
  • 1 cup boiling water (divided)
  • 1 (8-ounce) tub Cool Whip whipped topping, thawed
  • Holiday sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan with non-stick spray.
  2. Combine the white cake mix, eggs, water, and oil/butter in a large bowl. Mix on medium speed for about 2 minutes until smooth.
  3. Pour the batter into the prepared pan and bake for 28–30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool in the pan for 10–15 minutes. Poke holes into the cake evenly, about 1 inch apart.
  5. Dissolve the strawberry and lime Jello separately in ½ cup of boiling water each. Stir until fully dissolved.
  6. Spoon the dissolved Jello over the cake, alternating between the red and green mixtures.
  7. Refrigerate the cake for at least 2 hours or until the Jello is set.
  8. Spread the Cool Whip on top of the cake and decorate with holiday sprinkles.
  9. Slice, serve, and enjoy!

Notes

Ensure that your eggs and Cool Whip are at room temperature for better mixing. This cake can be made a day in advance.
