Cinnamon Roll Pumpkin Bread with Cream Cheese Glaze

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the Cinnamon Swirl:
  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted
  • For the Cream Cheese Glaze:
  • 2 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan, and line it with parchment paper.
  2. In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. In a small bowl, mix the brown sugar, ground cinnamon, and melted butter to form a paste for the swirl.
  6. Pour half of the batter into the prepared pan. Spoon half of the cinnamon swirl mixture over the top and gently swirl it in. Repeat with the remaining batter and swirl.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Allow the bread to cool in the pan for 10-15 minutes before transferring to a wire rack.
  9. For the glaze, beat the cream cheese until smooth, then mix in powdered sugar and vanilla extract, adding milk until desired consistency is reached.
  10. Once cooled, drizzle the glaze over the bread, slice, serve, and enjoy!

Notes

For best results, make sure cream cheese and butter are at room temperature before use. Adjust the consistency of the glaze by adding more milk if needed.
