Cinnamon Rolls with Apple Cider Glaze

Deliciously soft cinnamon rolls infused with an apple cider glaze for a delightful fall treat.

  • 2 cups apple cider (preferably fresh)
  • 2 1/4 teaspoons active dry yeast
  • 2 tablespoons granulated sugar
  • 3 1/4 cups all-purpose flour, plus extra for dusting
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 3/4 teaspoon salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 3/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons reduced apple cider (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • 4 oz softened cream cheese (optional for frosting)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons reduced apple cider (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. In a saucepan over medium heat, reduce 2 cups of apple cider until it’s about 3/4 cup (20-25 minutes). Let it cool.
  2. Combine 3/4 cup of warm reduced apple cider, yeast, and sugar in a large bowl; let sit for 5-10 minutes.
  3. Add eggs, softened butter, and salt; stir to combine. Gradually mix in flour until a sticky dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Transfer to a greased bowl, cover, and let rise for 1 hour.
  5. Mix brown sugar, cinnamon, and nutmeg in a bowl for the filling.
  6. Roll the dough into a 16×12-inch rectangle, spread butter on top, and sprinkle with cinnamon-sugar mixture. Roll tightly and slice into 12 rolls.
  7. Place rolls in a greased baking dish, cover, and let rise again for 30-45 minutes.
  8. Preheat oven to 350°F (175°C) and bake rolls for 22-26 minutes until golden brown.
  9. For the glaze, whisk together powdered sugar, reduced cider, and vanilla extract. Drizzle over warm rolls.
  10. For optional cream cheese frosting, beat softened cream cheese, powdered sugar, reduced cider, and vanilla extract until smooth and spread over rolls.

Notes

Store leftover rolls in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
