These Cinnamon Sugar Blondies offer a soft and chewy texture paired with a delightful cinnamon sugar topping, perfect for family gatherings or a cozy treat.

  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the melted butter and brown sugar using a whisk until smooth and glossy, about 2 minutes.
  3. Add the eggs one at a time, whisking well after each addition, then mix in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Spread the batter evenly in the prepared baking pan and smooth the top.
  7. In a small bowl, mix the granulated sugar and cinnamon together and sprinkle over the top of the batter.
  8. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for about 15 minutes before cutting into squares and serving.

Notes

Store in an airtight container at room temperature for up to 4 days or in the fridge for up to a week. You can freeze them for up to 3 months. Avoid overbaking to maintain moistness.
