Citrus Sunshine Cookies

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 cup powdered sugar (for dusting)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 orange
  • Zest of 1 lemon
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the egg, orange juice, lemon juice, and vanilla extract until well combined.
  4. Mix in the orange and lemon zest.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
  7. Drop the dough onto ungreased baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until the edges are lightly golden.
  9. Allow to cool on the baking sheets for 3-5 minutes before transferring to wire racks.
  10. Dust lightly with powdered sugar before serving.

Notes

Store in an airtight container for up to a week. Can freeze for longer storage.
