Classic Bacon Carbonara Pasta

A rich and creamy pasta dish featuring thick-cut bacon and Parmesan, perfect for family gatherings or cozy dinners.

  • 12 ounces spaghetti or pasta of your choice
  • 6 slices thick-cut bacon, chopped
  • 3 large eggs, room temperature
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon freshly cracked black pepper
  • Salt to taste
  • 1 cup reserved pasta water

Instructions

  1. Bring a pot of salted water to a boil. Cook spaghetti until al dente, about 8-10 minutes, reserving 1 cup of pasta water before draining.
  2. In a skillet, cook chopped bacon until crispy and golden brown, about 6-8 minutes. Remove and set aside, leaving some fat in the pan.
  3. If using, sauté garlic in the bacon fat for about 30 seconds until fragrant.
  4. In a bowl, whisk together eggs, Parmesan, and black pepper until combined.
  5. Add drained pasta to the skillet and toss to coat in the bacon fat.
  6. Remove from heat and quickly pour the egg mixture over the pasta, stirring vigorously to create a creamy sauce. Add reserved pasta water as needed for desired consistency.
  7. Stir in bacon pieces and serve immediately, garnished with additional Parmesan and black pepper.

Notes

Have all ingredients prepped in advance for a smooth cooking process. Leftovers can be stored in an airtight container for up to 3 days.
