Coconut Buttercream Frosting

A rich, creamy frosting with a luscious coconut flavor, perfect for cakes and cupcakes.

Ingredients

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut (optional)
  • A pinch of salt

Instructions

  1. Beat the butter in a large bowl with an electric mixer on medium speed until creamy and pale, about 2-3 minutes.
  2. Add the powdered sugar gradually, mixing on low speed until incorporated.
  3. Incorporate the coconut milk and vanilla extract, and whip until light and fluffy—about 3-5 minutes.
  4. Add shredded coconut if using, folding it in gently for texture and flavor.
  5. Frost cakes or cupcakes immediately, or store in an airtight container in the fridge for up to a week.

Notes

Store leftover frosting in an airtight container in the refrigerator or freeze it for later use.
