Coconut Toffee Chocolate Chip Cookie Bars

Chewy, buttery cookie bars loaded with toasted coconut, crunchy toffee bits, and melty chocolate chips – a perfect blend of textures and flavors in every bite.

Ingredients

  • 1 cup shredded coconut

    1 cup toffee bits

    1 cup chocolate chips

    1 cup all-purpose flour

    1 cup brown sugar

    1/2 cup unsalted butter, melted

    1 large egg

    1 teaspoon vanilla extract

    1/2 teaspoon baking powder

    1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Toast coconut in dry skillet over medium heat until golden (3-4 minutes), stirring frequently. Set aside.
  3. Cream butter and sugars until fluffy. Beat in eggs one at a time, then vanilla.
  4. Whisk together flour, baking soda and salt. Gradually add to wet ingredients.
  5. Fold in toasted coconut, toffee bits, and semi-sweet chocolate chips.
  6. Spread dough evenly in prepared pan. Bake 25-28 minutes until golden brown.
  7. Cool completely. Optional: Melt milk chocolate chips and drizzle over bars.
  8. Cut into squares when fully cooled.

Notes

  • For extra crunch, use chocolate-covered toffee bits
  • Bars will firm up as they cool – don’t overbake
  • Store in airtight container at room temperature for 5 days
  • Freeze unbaked dough for up to 3 months
