These Coffee Cake Cookies combine buttery richness, cinnamon sweetness, and a hint of coffee flavor with a unique crumbly texture.

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crumb topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together flour, baking soda, salt, and cinnamon in a medium bowl.
  3. Cream the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla and sour cream or Greek yogurt.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fold in the crumb topping if using.
  7. Drop tablespoon-sized balls onto baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes until edges are golden brown.
  9. Cool on the baking sheet for a few minutes before moving to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days; freeze for up to 3 months.
