  • 1½ cups (190g) all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 2 tbsp lemon zest (from 23 lemons)
  • ½ cup (120ml) vegetable oil
  • ½ cup (120g) sour cream
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • For the Glaze:
  • 1 cup (120g) powdered sugar
  • 23 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Dry ingredients: Whisk flour, baking powder, baking soda, and salt in medium bowl.
  3. Wet ingredients: In large bowl, beat eggs and sugar until pale and thick (3-4 mins). Add zest, oil, sour cream, lemon juice and vanilla; mix until combined.
  4. Combine: Gradually add dry ingredients to wet, mixing just until incorporated (do not overmix).
  5. Bake: Pour into prepared pan. Bake 45-55 minutes until toothpick comes out clean. Cool in pan 15 mins, then transfer to rack.
  6. Glaze: Whisk powdered sugar and lemon juice until smooth. Drizzle over cooled loaf and sprinkle with zest. Let set 30 mins before slicing.

  • For extra moist loaf: Wrap cooled (unglazed) loaf in plastic and refrigerate overnight before glazing
