Corn Guacamole

A fresh and vibrant twist on classic guacamole, featuring sweet corn, creamy avocados, and zesty lime juice. Perfect for dipping, topping, or as a standalone side dish.

Ingredients

  • 3 ripe avocados, peeled and pitted
  • 1 cup corn kernels (fresh, grilled, or canned and drained)
  • 1/4 cup finely diced red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, mash the avocados with a fork to your desired consistency.
  2. Add the corn, red onion, jalapeño, cilantro, lime juice, salt, cumin, and black pepper. Stir to combine.
  3. If using, gently fold in the diced tomato.
  4. Taste and adjust seasoning as needed.
  5. Serve immediately with tortilla chips or as a topping for tacos, salads, or bowls.

Notes

  • For a smokier flavor, use grilled corn.
  • To prevent browning, press plastic wrap directly onto the surface of the guacamole if not serving right away.
  • For extra heat, leave the seeds in the jalapeño or add a pinch of cayenne pepper.
  • This guacamole is best enjoyed fresh but can be stored in the refrigerator for up to 1 day.
