Corn, Tomato, and Feta Salad

A vibrant and easy-to-make summer salad bursting with sweet corn, juicy tomatoes, and creamy feta.

Ingredients

  • 1 cup fresh corn kernels
  • 2 cups cherry tomatoes, halved
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients: Shuck the corn and remove kernels from the cob, halve the tomatoes, chop the onion and basil, and crumble the feta.
  2. Mix the base: In a bowl, mix corn, tomatoes, feta, onion, and basil.
  3. Whisk the dressing: Combine olive oil and balsamic vinegar, adding salt and pepper.
  4. Combine everything: Drizzle the dressing over the salad and toss gently.
  5. Serve: Enjoy immediately or let it sit in the fridge for 30 minutes to meld flavors.

Notes
