Irresistibly Soft Cornbread Squares

Delightful Cornbread Squares that are sweet, moist, and perfect for any occasion, capturing the essence of Southern comfort food.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/3 cup honey
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice or white vinegar)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until no lumps remain.
  3. In another bowl, mix the melted butter, honey, eggs, and buttermilk until smooth.
  4. Merge the wet ingredients into the dry ingredients and stir gently until just combined; don’t overmix.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes until golden and a toothpick comes out clean.
  6. Cool for 10 minutes, slice into squares, and serve warm, optionally drizzling with honey.

Notes

These squares are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days or in the fridge for a week. They can also be customized with various mix-ins.
