1 cup (225g) low-fat cottage cheese
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1/8 tsp salt
1/8 tsp black pepper
Cooking spray or parchment paper
Optional variations:
1/2 tsp everything bagel seasoning
1/4 tsp chili powder + lime zest
1 tsp grated Parmesan cheese
Instructions
Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or silicone mat.
Drain cottage cheese in fine mesh strainer for 5 minutes to remove excess liquid.
In a bowl, mix drained cottage cheese with all seasonings until well combined.
Spoon mixture into 12 small mounds (about 1 tbsp each) on prepared sheet, spacing 2 inches apart.
Flatten each mound into thin circles (about 1/8 inch thick) using back of spoon.
Bake for 20-25 minutes until edges turn golden brown and centers are firm.
Turn off oven and let chips sit inside for 10-15 minutes to crisp further (optional).
Cool completely on baking sheet before removing – they’ll crisp up as they cool.
Notes
Extra crispy: Bake longer (25-30 min) for darker, crunchier chips.
Storage: Keep in airtight container at room temp for 2 days (they lose crispness over time).
No sticking: Ensure parchment paper is used or baking sheet is well-greased.
