  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 1 tablespoon butter (for greasing the pan)

Instructions

  1. Place a medium-sized mixing bowl on the countertop.
  2. Crack the eggs into the bowl and beat until combined and frothy.
  3. Add the cottage cheese to the bowl and stir until well combined.
  4. In a separate bowl, mix the flour, salt, sugar, and baking powder together.
  5. Slowly add the dry ingredients to the wet mixture and mix gently until combined.
  6. Pour in the milk and stir until you have a smooth, slightly thick batter.
  7. Preheat a frying pan or griddle over medium heat and add butter to coat the surface.
  8. Spoon 2-3 tablespoons of batter onto the pan for each pancake.
  9. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  10. Transfer to a plate and serve immediately with your favorite toppings.
