Ingredients

Scale
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk
  • 2 apples, peeled and chopped
  • 2 tablespoons granulated sugar (for apples)
  • 1 teaspoon ground cinnamon (for apples)
  • 1/2 cup powdered sugar
  • 1 to 3 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a small bowl, combine light brown sugar and ground cinnamon. Stir well and set aside.
  3. In another bowl, toss the chopped apples with granulated sugar and cinnamon. Set aside.
  4. In a medium bowl, cream together granulated sugar and butter until smooth and fluffy (3-5 minutes).
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour and baking powder.
  7. Alternate adding the flour mixture and milk to the creamed mixture, mixing until just combined.
  8. Pour half of the batter into the prepared loaf pan. Layer half of the apple mixture, then half of the brown sugar-cinnamon mix. Repeat with remaining batter, apples, and brown sugar mix.
  9. Gently press the apples into the batter and swirl the brown sugar mixture. Bake for 60-70 minutes, or until a toothpick comes clean.
  10. Let the bread cool for 15 minutes before transferring to a wire rack.
  11. Mix powdered sugar with milk or cream for glaze and drizzle over cooled bread.

Notes

Ensure your butter is softened for perfect creaming. Store in an airtight container for up to 3 days or refrigerate for up to a week.
