Country Apple Fritter Bread

A comforting loaf packed with fresh apples and warm spices, perfect for fall gatherings and cozy brunches.

  • 1/3 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk
  • 2 apples, peeled and chopped
  • 2 tablespoons granulated sugar (for apples)
  • 1 teaspoon ground cinnamon (for apples)
  • 1/2 cup powdered sugar (for glaze)
  • 1 to 3 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix 1/3 cup brown sugar with 1 teaspoon cinnamon in a small bowl and set aside.
  3. Toss chopped apples with 2 tablespoons granulated sugar and 1 teaspoon cinnamon; set aside.
  4. Cream together 2/3 cup granulated sugar and 1/2 cup softened butter until creamy.
  5. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  6. In another bowl, whisk together flour and baking powder, then gradually add to the creamed mixture, alternating with milk.
  7. Pour half the batter into the pan, layer half the apples and sprinkle half the sugar-cinnamon mixture. Repeat with remaining batter, apples, and topping.
  8. Press apples lightly into batter, then swirl with a knife.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack.
  11. For the glaze, mix powdered sugar with milk or cream to desired consistency and drizzle over cooled bread.

Notes

Use room temperature butter for easier creaming. Honeycrisp or Granny Smith apples work best.
