Hearty Chicken Noodle Soup

A comforting Chicken Noodle Soup recipe filled with fresh vegetables and tender chicken, perfect for chilly days.

  • 2 cups cooked chicken, shredded
  • 4 cups low-sodium chicken broth
  • 1 cup egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  2. Add 1 chopped onion, 1 cup sliced carrots, and 1 cup chopped celery, and sauté for 5-6 minutes until softened.
  3. Add 2 minced cloves of garlic and 1 teaspoon dried thyme, cooking for an additional minute until fragrant.
  4. Pour in 4 cups of chicken broth and bring to a rolling boil (about 5 minutes).
  5. Add 1 cup of egg noodles and cook according to package instructions (7-8 minutes).
  6. Stir in 2 cups of shredded chicken and season with salt and pepper to taste.
  7. Allow the soup to simmer for another 3-5 minutes to heat through.
  8. Garnish with fresh parsley before serving hot.

Notes

This soup freezes beautifully and can be stored in the fridge for up to 3 days. Add any additional vegetables you like for customization.
