Festive Cranberry Christmas Cake

A deliciously joyful holiday treat combining tart cranberries and sweet cake, perfect for festive gatherings.

  • 2 cups fresh cranberries (or frozen, thawed and drained)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, salt, and baking soda.
  5. Gradually add the flour mixture to the butter mixture, mixing just until combined.
  6. Gently fold in the fresh cranberries.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for about 30-35 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool for at least 15 minutes before dusting with powdered sugar.
  10. Slice and serve.

Notes

Store at room temperature for 2-3 days or refrigerate for up to a week. Can be frozen for up to 3 months.
