Cranberry Crumb Bars

Buttery shortbread-like crust and crumb topping envelop a vibrant cranberry filling in these irresistible bars. The perfect balance of sweet and tart, ideal for holiday gatherings or winter baking.

  • For Crust & Topping:
  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup (226g) cold unsalted butter, cubed
  • 1 large egg
  • 1 tsp vanilla extract
  • For Filling:
  • 12 oz (340g) fresh or frozen cranberries
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp orange juice
  • 1 tsp orange zest
  • 1/4 tsp cinnamon

Instructions

  1. Prep: Preheat oven to 375°F (190°C). Line 9×9-inch pan with parchment paper.
  2. Make crust: In food processor, pulse flour, sugar, baking powder and salt. Add butter and pulse until crumbly. Add egg and vanilla; pulse until clumps form.
  3. Press crust: Reserve 1¼ cups mixture for topping. Press remainder firmly into prepared pan. Bake 15 minutes until pale golden.
  4. Make filling: While crust bakes, combine cranberries, sugar, cornstarch, orange juice, zest and cinnamon in saucepan. Cook over medium heat 8-10 minutes until berries burst and mixture thickens.
  5. Assemble: Spread filling over hot crust. Crumble reserved topping evenly over filling.
  6. Bake: 30-35 minutes until topping is golden and filling bubbles at edges. Cool completely before cutting.

Notes

  • For sweeter bars, increase filling sugar to 3/4 cup
  • Add 1/2 cup chopped pecans or walnuts to topping for crunch
  • Can substitute 1 cup cranberry sauce for homemade filling
  • Freezes well for up to 3 months – layer between wax paper
  • Cleanest cuts come from chilling bars 1 hour before slicing
