Cranberry Feta Pasta Salad

A delightful medley of sweet cranberries and tangy feta cheese on a bed of spinach pasta, perfect for summer picnics or cozy dinners.

  • 8 oz spinach pasta
  • 1 cup feta cheese, crumbled
  • 1 cup sweet cranberries
  • 2 cups lettuce, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil salted water and cook spinach pasta according to package directions (8-10 minutes). Aim for al dente.
  2. Drain pasta and cool for 10 minutes. In a mixing bowl, combine pasta, feta, cranberries, and lettuce. Stir gently.
  3. In a separate bowl, whisk olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over pasta salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 3 days. Can be made a day in advance; add lettuce right before serving.
