Cranberry Orange Bread

  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed orange juice
  • Zest of 1 large orange
  • 1/2 cup butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, eggs, orange juice, orange zest, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients, then gently fold in cranberries.
  5. Transfer the batter to the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, checking with a toothpick at 50 minutes for doneness.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze, mix a tablespoon of orange juice with zest and drizzle over the cooled bread.
