Cranberry Orange Scones

Delightful cranberry orange scones with a perfect balance of sweet and tart flavors, ideal for breakfast or brunch.

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 cup heavy cream, plus extra for brushing
  • 1 large egg
  • 1 tablespoon orange zest from about 1 large orange
  • 2 tablespoons fresh orange juice
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add cold unsalted butter cubes to the dry mixture and cut in until it resembles coarse crumbs.
  4. Stir in cranberries and orange zest.
  5. In a separate bowl, whisk together heavy cream and egg, then pour into dry ingredients.
  6. Gently knead until the dough comes together.
  7. Turn the dough onto a floured surface and shape into a circle about 1 inch thick.
  8. Cut into wedges and place on a parchment-lined baking sheet.
  9. Brush with extra heavy cream and sprinkle with sugar.
  10. Bake for 15-20 minutes until golden brown. Cool on a wire rack.

Notes

Best enjoyed fresh but can be stored at room temperature for up to two days.
