Cranberry Quick Bread

A delightful and moist quick bread infused with the sweet-tart flavors of cranberries and orange zest, perfect for any season.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix chopped cranberries, orange juice, vegetable oil, eggs, and vanilla.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Transfer the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, checking for doneness with a toothpick.
  7. Cool in the pan for 10 minutes, then on a wire rack before slicing.
