Delightful Cranberry Shortbread Bars combining buttery shortbread with tart cranberries, perfect for any occasion.

Ingredients

  • 2 cups fresh cranberries (or thawed frozen cranberries)
  • 1 cup unsalted butter, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Stir in the vanilla extract until combined.
  4. Gradually mix the flour and salt into the creamed mixture.
  5. Press half of the dough evenly into the bottom of the prepared baking dish.
  6. Scatter the cranberries evenly over the dough layer.
  7. Crumble the remaining dough over the cranberries.
  8. Bake for 25-30 minutes or until the top is golden brown.
  9. Allow to cool before cutting into squares.
