Cozy Creamy Butternut Squash Gnocchi with Sausage, Thyme, and Sage

A warm and inviting dish combining homemade gnocchi with butternut squash, Italian sausage, and fresh herbs in a creamy sauce.

  • 1 package gnocchi (about 16 ounces)
  • 2 cups butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casing
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh sage, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Bring a pot of salted water to a boil. Add the gnocchi and cook according to the package instructions (usually about 2-3 minutes until they float). Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and diced butternut squash. Sauté for about 10-15 minutes until tender and lightly caramelized.
  3. Push the sautéed squash to one side of the skillet and add the Italian sausage, cooking until browned, about 5-7 minutes.
  4. Stir in the fresh thyme and sage, cooking for one more minute.
  5. Lower the heat and pour in the heavy cream, stirring well to combine.
  6. Add the cooked gnocchi to the skillet, gently mixing to coat each piece.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Ensure ingredients are at room temperature for smooth blending. Leftovers can be refrigerated for 3 days or frozen (preferably before adding cream).
