Heavenly Creamy Chicken and Gnocchi

A warm and creamy bowl of Chicken and Gnocchi that combines savory chicken, rich cream, and flavorful ingredients for the ultimate comfort food.

  • 2 tablespoons olive oil or sundried tomato oil
  • 1 pound chicken breast, cut into ¾1 inch pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • ⅓ cup sundried tomatoes, chopped
  • ½ cup grated parmesan cheese
  • 2 cups baby spinach leaves

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with Italian seasoning, salt, and pepper. Cook for 6-8 minutes until browned and cooked through.
  2. Remove chicken and set aside.
  3. Melt butter in the skillet. Add minced garlic and sauté for 1 minute.
  4. Pour in chicken stock, scraping the bottom to deglaze the pan.
  5. Stir in heavy cream and let it thicken slightly for 2-3 minutes.
  6. Add gnocchi and cook according to package instructions (2-3 minutes or until they float).
  7. Return chicken to the skillet along with smoked paprika, sundried tomatoes, parmesan cheese, and spinach. Stir gently until spinach wilts.
  8. Serve warm, garnishing with extra parmesan and fresh herbs if desired.

Notes

This recipe can be made dairy-free by substituting coconut cream and omitting cheese. Store leftovers in the fridge for up to 3 days.
